What is artisanal coffee?

People talk about artisanal coffee all the time, but what does the word actually mean? It's not just a nice label on a bag — it's a whole different way of making coffee, the opposite of mass production. Here's what's really behind it.

Philosophy and heritage

An artisan roaster is rarely a big factory. More often than not, it's a small, family-run business, working with small partner farms rather than anonymous industrial supply chains. Many keep blend recipes handed down over decades — adjusted slightly over time as harvests change, but always true to their original character.

Their goal has never been to produce a lot, but to produce well: small quantities of exceptional coffee rather than large, standardised volumes. And that same care extends beyond their own workshop — they choose their partners abroad, like us here in France, just as carefully, to make sure their coffee keeps being sold and shared with the same philosophy they put into it.

What is artisanal roasting?

Artisanal roasting means a master roaster personally guiding every single roast, start to finish. Some of our roasters work without any technology at all — just their eyes, their nose, their ears, and years of experience. That should tell you how much skill it takes.

Roasting is slow, too: usually 20 minutes or more, compared to the handful of minutes an industrial roast takes. That slowness gives the aromas time to develop fully, without rushing the bean.

And above all, it adapts: no two batches of green coffee are ever quite the same, and the season shapes the climate the beans were grown in. Our roasters adjust the way they roast with every new arrival of beans. That's also why traceability matters so much with an artisan roaster: the origin of the coffee is always clearly stated.

Because the quantities are small, the coffee is almost always roasted to order, in their workshop, with no stock sitting on a shelf. We place an order, they roast it, and it heads straight to France. That's what makes the real difference in the cup — and for the crema, which we happen to love at Barcino!

The benefits of artisanal coffee

First, the result in the cup: flavours that are far more refined and complex, without excess acidity or bitterness. Many of our coffees reveal themselves in stages: you'll first pick up roasted hazelnut notes, sometimes lightly fruity ones like red berries, before chocolate and cocoa flavours take over in the cup.

Coffee is a unique product, with real people behind it. With artisanal coffee, you know who roasted it, how, and with what philosophy. We regularly publish articles and videos to help you get to know, little by little, the workshop, the philosophy, the family and the traditions behind each of our roasters.

And then there's quality, plain and simple. An artisan roaster chooses the best beans available, because they can: they don't have production thresholds to hit, and they're genuinely passionate about what they do — always chasing the best possible result. The upshot: when you brew your espresso or your moka, you get noticeably more flavour in the cup, plus the pleasure of knowing it was made by an artisan you're getting to know, little by little.
